Cheap 'n Easy Veggie Chili

Oil for sauté
1 onion, chopped
2 garlic cloves (I use premade garlic paste from a jar)
2 15oz. cans of diced tomatoes, Mexican or green chile style
1 15oz. Can of pinto beans
1 15oz. Can of kidney beans
1 15 oz. Can of white beans
3 T. chili powder
salt and pepper to taste
pinch of cumin (optional)
a couple pinches of cayenne pepper
2 zucchini, cut into bite size pieces

Sauté onion and garlic. Drain beans together in a colander and rinse well, this reduces the sodium content. Add tomatoes, beans and spices. Simmer for about 15 minutes and then add zucchini. Heat through and serve with sour cream, diced green onion and/or shredded cheese. This is cheap and easy! And I made it up myself. :-)
