
I am making Thanksgiving dinner this year. My husband's mom and grandma will be staying with us. I am lucky in that they are interested in vegetarian food. They even cook totally vegetarian meals for us when we go visit them. Anyway, this year I am keeping it light and simple because neither they or my husband ever eat very much. I'll be making wild mushroom stuffed pastry tarts, roasted acorn squash stuffed with mashed potatoes and asparagus in a lemon juice and topped with roasted pine nuts. It'll all be served with mushroom gravy, dinner rolls, cranberries and the traditional pumpkie pie. I'll post the recipes I'm using later. I decided to try new ones this year instead of going with traditional favorites.
