Banana Bread

2 cups all-purpose flour
1 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 c mashed ripe banana (about 2-3 med.)
1/3 cup milk
1/4 cup applesauce
1 egg
1/2 cup chopped nuts or mini chocolate chips (optional)

Preheat oven to 350 F. Spray bottom of loaf pan with nonstick cooking spray.
Combine flour, sugar, baking powder, and salt in large bowl. Add remaining
ingredients; stir just until dry ingredients are moistened. Pour batter into
prepared pan. Bake 60 min. or until cake tester inserted in center comes out
clean. Remove from oven to cooling rack. Cool in pan 10 min. Loosen sides of
loaf from pan; remove from pan. Cool completely. Serve with a schmear of cream cheese on top!

Yield: 1 loaf (12 servings)
Approx. 230 cal. and 8 grams of fat per serving
